Zea’s potato topped mince meat casserole
1 lb. grass fed ground beef
1 lb. small, 1/4inch sliced organic potatoes (I use whatever is available & prefer unpeeled & well scrubbed, but it’s your choice)
4 medium, 1/4 inch sliced organic carrots (I prefer unpeeled & well scrubbed, but it’s your choice)
1/2 small, diced organic yellow or white onion
4oz grated organic cheese (I use whatever is available)
1 organic gravy seasoning packet (My go to choice currently is Simply Organic. I use whatever is in the pantry: chicken, brown, vegetarian, mushroom, etc)
2 tablespoons organic olive oil
1 teaspoon of organic dried rosemary
1 teaspoon sea salt
1/2 teaspoon organic garlic powder
8X8 Baking dish or similar
Shallow Roasting pan
Makes 4 moderate servings.
- Preheat oven to 350 degrees.
Grease, butter, or spray an 8X8 (or similar) baking dish, set aside.
- Line roasting pan with tinfoil (optional)
Put sliced potatoes in bowl, add 2 tablespoons organic olive oil, 1 teaspoon of organic dried rosemary, 1 teaspoon sea salt, 1/2 teaspoon organic garlic powder and toss to evenly coat. Let sit 10 minutes, stirring at least once. (Can be made ahead, set in fridge, stir occasionally.) Then place potatoes in shallow roasting pan in a single layer. Roast in the oven 15-20 minutes or until sizzling and light golden brown.
Heat skillet on medium, and fully brown the grass fed ground beef, drain and set aside.
In the same skillet add diced organic onion & sauté for several minutes until slightly browning. Set aside with ground beef.
- Microwave sliced carrots until firm tender, set aside.
Make gravy packet as directed. (I use the skillet to save on dishes/water)
Return ground beef and onion to gravy sauce in skillet, heat on low, stirring occasionally.
Chunky chop carrots and add to beef, onion, gravy mix in skillet. Stir.
When potatoes are done, remove from roasting pan and evenly line the baking dish with half of the potatoes, using caution as they will be hot. Pour beef, onion, carrot, gravy mix evenly over the top and cover with remaining half of potatoes. Cover evenly with grated cheese and put into 350 degree oven for 15-20 minutes until bubbly and golden brown.
